Ann Romney places primary importance on her role as a wife, a mother, and a grandmother. As First Lady of Massachusetts, she worked to focus attention on the challenges facing at-risk youth and served as the Governor’s Liaison to the White House Office of Faith-Based and Community Initiatives. Diagnosed with multiple sclerosis in 1998, she has volunteered much of her time to raise awareness of the disease. 100% of the proceeds from The Romney Family Table cookbook will go to the Center for Neurologic Diseases at Brigham & Women’s Hospital in Boston.

For the Romney family, the heart of the home is the kitchen. In the cookbook “The Romney Family Table”, Ann Romney, reflects on her many years as a mom, shares family recipes, and describes some of her favorite and not-so-favorite moments of raising a family. Woven together with personal memories and traditions are more than 125 Romney’s family favorite recipes. I hope this cookbook will inspire your own traditions and family dinners for years to come.

I have been cooking Ann’s recipe for Meatloaf Cakes since she was on the Rachel Ray’s show. This recipe is so awesome I just had to share this recipe.

Ann Romney’s Meatloaf Cakes Recipe

Cook Time: 35 min

Prep Time: 10 min

Ingredients

( Serves 6 )

1 1/2 pound ground beef

4 slices bread (crumbled into small pieces) (or 3/4 cup dried breadcrumbs)

1 whole large egg

1/4 cup onion (chopped)

1/4 cup lemon juice

2 teaspoon seasoned salt

For Sauce:

1/4 cup ketchup

1/4 cup brown sugar

1 teaspoon dry mustard

1/4 teaspoon ground cloves

1/4 teaspoon ground allspice

Heat oven to 350ºF.

In a large mixing bowl, combine the ground beef, crumbled bread or breadcrumbs, egg, onion, lemon juice and seasoned salt. Mix lightly but thoroughly and shape into six small loaves.

Space evenly on a baking sheet and bake for 15 minutes; meanwhile, prepare the sauce.

In a small bowl, mix together the ketchup, brown sugar, mustard, cloves and allspice.

When the meatloaf cakes have baked for 15 minutes, brush each loaf with sauce and return to the oven.

Continue to bake until the meatloaf cakes read 165ºF in the center when tested with an instant-read thermometer, about 20 more minutes.

If desired, serve with scalloped potatoes and steamed vegetables.

Pass additional sauce separately.
